 | Dirty Rice Skillet with Smart Sausage® and Smart Strips® Chick'n

 Ingredients:
 
				  | 1 package (12 oz) Lightlife® Smart Sausages® Smoked Style, cut into 1/2-inch slices |  | 1 package (6 oz) Lightife® Smart Strips® Chick'n |  | 2 Tbsp. vegetable oil, divided |  | 1 cup chopped celery |  | 1 cup chopped green bell pepper |  | 1 cup chopped yellow onion |  | 2 tsp. Cajun seasoning |  | 1 tsp. finely chopped garlic |  | 2 cups brown rice, uncooked |  | 2 1/2 cups vegetable broth |  | 1 can (14.5 oz) diced tomatoes, undrained |  | 1/2 cup chopped green onions | 
 In a large skillet, heat 1 tablespoon of oil over medium heat. Add Smart Sausage® and cook about 5 minutes or until browned; remove. In the same skillet, heat remaining 1 tablespoon of oil. Add celery, bell pepper, onion, Cajun seasoning and garlic. Cook about 5 minutes or until vegetables are soft. Add rice; cook and stir about 1 minute. Add broth, tomatoes, Smart Sausage® and Smart Strips® Chick'n. Bring to a simmer and cook, covered, over low heat about 45 minutes or until liquid is absorbed. Just before serving, stir in green onions.
