 | Roasted Vegetables with Smart Sausages®

 Ingredients:
 
				  | 4 links Lightlife® Smart Sausages® Italian Style or Chorizo Style, (or both) |  | 1 large onion, chopped into large pieces |  | 1 Portobello mushroom, or several smaller ones, chopped into large pieces |  | 1 large tomato, chopped into large pieces |  | 1 green or red bell pepper, chopped into large pieces |  | 1 head red cabbage (will turn blue when cooked), chopped into large pieces |  | 2 carrots, cut into bite sized pieces |  | 2 Tbsp. olive oil |  | 1/2 tsp. salt |  | 1/4 tsp. ground black pepper | 
 Preheat oven to 400°F. Cut the Smart Sausages® into bite-sized pieces and line them in the bottom of a roasting pan. Cover with chopped veggies and sprinkle all with olive oil, salt and pepper. Bake for 30-40 mins., stirring every 10-15 mins.; the mushrooms and tomatoes will make it juicy. This dish is delicious served hot over brown rice with a crusty baguette, if desired.
