 | Gimme Lean® Moroccan Meatballs

 Ingredients:
 
				  | 1 package (14 oz) Lightife® Gimme Lean® Sausage |  | 1 can (14.5 oz) stewed tomatoes (no salt added), undrained |  | 1 tsp. ground cumin |  | 1/4 tsp. ground cinnamon |  | 1/4 tsp. ground coriander |  | 1 1/4 cups water |  | 1 cup whole-wheat couscous, uncooked |  | 1/3 cup cooked diced carrots |  | 1/3 cup cooked corn kernels |  | 1/3 cup cooked shelled peas |  | 1/2 cup plain low-fat yogurt |  | 1 tsp. garlic, finely chopped |  | 1 tsp. chopped fresh mint leaves | 
 Form Gimme Lean® Sausage into 16 meatballs. In a medium skillet, combine meatballs, tomatoes, cumin, cinnamon and coriander. Simmer over medium heat, covered, for about 10 minutes. While meatballs are cooking, bring water to a boil in a medium saucepan. Add couscous, carrots, corn and peas; cover and remove from heat. Let sit 5 minutes; fluff with a fork. Whisk together yogurt, garlic and mint. Serve meatballs and sauce on top of couscous and drizzle with yogurt.
