 | Gumbo with Smart Sausages® Chorizo and Smart Deli® Ham

 Ingredients:
 
				  | 1 package (12 oz) Lightlife® Smart Sausages® Chorizo Style, cut into 1/2-inch pieces |  | 1 package (5.5 oz) Lightlife® Smart Deli® Ham, cut into medium dice |  | 1/2 cup vegetable oil |  | 1/3 cup all-purpose flour |  | 1 onion, diced |  | 1 green bell pepper, diced |  | 2 celery stalks, cut into 1/4-inch slices |  | 2 cups vegetable broth |  | 2 cups frozen cut okra |  | 1 large tomato, chopped |  | 1 cup water |  | 3 Tbsp. finely chopped garlic |  | 3 Tbsp. salt-free Cajun seasoning |  | 1 tsp. salt |  | 1 tsp. dried thyme leaves |  | 1/2 tsp. ground black pepper |  | 3 cups cooked long-grain white rice | 
 In a large heavy-bottomed pot, stir together oil and flour until smooth. Cook over high heat for 10 minutes, stirring frequently, until mixture is a dark caramel color. Lower heat to medium and add onion, bell pepper and celery. Cook for 10 minutes, stirring frequently. Cool 5 minutes; add remaining ingredients, except rice. Bring to a simmer and cook, partially covered, 30-40 mins. or until mixture starts to thicken, stirring occasionally. Serve over rice.
