Grilled Vegetable and Veggie Burger Salad

Ingredients:


1 package (12 oz) Lightlife® Backyard Grill'n Veggie Burgers
grilling spray
1 small zucchini, cut into 16 pieces
1 small yellow summer squash, cut into 16 pieces
1 small red bell pepper, cut into 16 pieces
3 green onions, cut into 16 pieces (2-inches long)
8 wooden skewers (10-inch), soaked in water 30 minutes
1 Tbsp. extra virgin olive oil
1/4 cup extra virgin olive oil
2 Tbsp. balsamic vinegar
1 tsp. finely chopped garlic
1/4 tsp. kosher salt
1/8 tsp. cracked black pepper
4 cups mixed baby salad greens
1/2 cup chopped fresh basil

Spray cold grate of outdoor grill with grilling spray. Prepare grill for medium heat.

Meanwhile, place 2 pieces each of zucchini, squash, red pepper and green onion on each skewer. Brush skewers with oil. Place on grill and cook 8-10 mins. or until softened, turning once. Remove from grill; set aside.

Meanwhile, stir together dressing ingredients in small bowl or glass measure; set aside.

Grill burgers 7-8 mins. or until hot, turning once. Remove from grill and cut into 3/4-inch pieces.

To assemble salads, divide greens and basil between 4 plates. Top each with 2 vegetable skewers and 1 cut-up burger. Drizzle dressing evenly over salads.
