Wild Rice Soup with Bacon

Ingredients:


5 slices of Lightlife® Smart Bacon®, cooked and crumbled
1/2 cup raw wild rice
2 cups water
1/4 cup butter
2 Tbsp. chopped onion
1/3 cup all-purpose flour
3 cups vegetable broth/stock
1/2 cup shredded carrot
1/4 cup sliced almonds
1/4 tsp. freshly cracked pepper
1 cup fat-free half-and-half
chopped fresh parsley (optional)

Wash wild rice thoroughly. In medium saucepan place 1/2 cup of wild rice and 2 cups of water; bring to a boil over high heat. Reduce heat to medium-low and cook covered 35-40 mins. or until rice is tender. Remove from heat; fluff with a fork. Set aside.

In Dutch oven melt butter. Add onion. Cook and stir until onion softens (3-4 mins.).

Add flour; continue cooking, stirring frequently for 1 minute. Add vegetable broth; continue cooking, stirring frequently, until mixture is smooth (2-3 mins.).

Add wild rice, carrot, crumbled Smart Bacon®, almonds and pepper. Continue cooking, stirring frequently, until mixture is hot (4-5 mins.).

Add half and half. Continue cooking, stirring frequently until mixture is heated through. Serve immediately with a sprinkle of parsley, if desired. Refrigerate leftovers.
