Tempeh Sloppy Joes

Ingredients:


2 packages (8 oz each) Lightlife® Organic Soy Tempeh
1 Tbsp. canola oil
1 large yellow onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 cloves garlic, finely chopped
2 Tbsp. chili powder
1 can (28 oz) diced tomatoes, undrained
1/4 cup ketchup
1 tsp. vegetarian Worcestershire sauce
1 cup water
1/4 cup chopped fresh cilantro
6 drops hot pepper sauce
6 Kaiser rolls, toasted

Wash and prepare all the veggies. In a large skillet, heat canola oil over medium heat. Add onion and peppers, sauté until softened, stirring occasionally. Add garlic and chili powder and sauté 2 minutes longer.

With your hands, break up the tempeh and crumble it into the skillet, breaking it up more with the help of a wooden spatula or spoon. Add tomatoes, ketchup, Worcestershire sauce and water; mix well. Simmer, stirring occasionally, until heated through about 10 minutes.

Remove from heat; stir in cilantro and hot sauce. Split rolls in half and fill.
