 | Smart Bacon® & Spinach Salad with Shallot Dressing

 Ingredients:
 
				  | Dressing: |  | 4 shallots |  | 8 Tbsp. olive oil |  | 1 1/2 tsp. salt |  | 3 Tbsp. natural rice vinegar |  | 3 Tbsp. granulated sugar |  | Salad: |  | 1 package (5 oz) Lightlife® Smart Bacon® |  | 2 Tbsp. vegetable oil |  | 10 ounces baby spinach leaves |  | 1/2 cup dried cranberries |  | 1 cup diced tomato |  | 1/3 cup pistachios |  | 1/3 cup crumbled Gorgonzola cheese | 
 Shallot Dressing Directions: Preheat oven to 450°F. Wash and peel skins off shallots. Drizzle 2 tablespoons of olive oil over shallots and then sprinkle salt over them. Place on sheet pan and cover pan with foil. Roast for 25-30 mins. After removing from oven, allow shallots to cool, then chop into small pieces. Mix shallots with the remaining 6 tablespoons of olive oil, vinegar and sugar. Salad Directions: While the shallots are roasting, fry the Smart Bacon® in a skillet with vegetable oil on medium-high heat for 2-3 mins. Cool Smart Bacon® and then chop. Mix with the other salad ingredients. Toss dressing and salad just before serving.
