Grilled Black Bean Burger with Corn Salsa

Ingredients:


1 package (12 oz) Lightlife® Kick’n Black Bean Burgers
grilling spray
2 medium ears of fresh sweet corn, husks removed
2 tsp. extra virgin olive oil
1 can (14.5 oz) fire-roasted diced tomatoes, drained well
1/4 cup chopped fresh dill weed
1/4 cup chopped red onion
2 Tbsp. vegetable oil
1 Tbsp. spicy brown mustard
1 Tbsp. red wine vinegar
1/2 tsp. finely chopped garlic
1/4 tsp. kosher salt
1/4 tsp. ground black pepper
4 leaves green leaf lettuce
4 hamburger buns

Spray cold grate of outdoor grill with grilling spray. Prepare grill for medium-high heat.

Brush corn with olive oil; grill 10-12 mins. or until browned lightly, turning occasionally. Remove from heat; cool slightly.

Meanwhile, combine tomatoes, dill, onion, vegetable oil, mustard, vinegar, garlic, salt and pepper in medium bowl; set aside.

Grill burgers over medium heat 7-8 mins. or until hot, turning once.

Meanwhile, cut corn kernels from cob with sharp knife. Add corn to tomato mixture; mix well.

Place burgers and lettuce on buns. Top each with 1/3 cup of salsa. Refrigerate leftover salsa.
