Taco Salad with Fakin' Bacon and Smart Ground®

Ingredients:
Dressing: | 1/2 cup vegan mayonnaise alternative | 1/2 cup vegan sour cream dairy alternative | 1/2 cup salsa | 3 Tbsp. lime juice | 2 Tbsp. onion powder | 2 Tbsp. garlic powder | 1 Tbsp. chipotle pepper in adobo sauce | Salad: | 1 package (5 oz) Lightlife® Smart Bacon® | 1 package (12 oz) Lightlife® Smart Ground® Original | 2 Tbsp. vegetable oil | 1 head romanie lettuce, wash and cut | 1/2 cup canned black beans, drained and rinsed | 1 large tomato, chopped | 1 ripe avocado, cut into small chunks | 1 cup shredded vegan cheese | 4 or 5 tortilla chips (optional) |
Dressing directions: Whisk together all ingredients in medium bowl; set aside. Salad directions: Heat oil in skillet over medium-high heat. Add Smart Bacon® and cook 4 minutes, stirring frequently. Remove Smart Bacon® and add Smart Ground® Original to the skillet. Cook 3 minutes, stirring frequently to break up. In a large salad bowl, toss lettuce with dressing. Top with black beans, tomato, avacado, cheese, Smart Bacon® and Smart Ground®. If desired, crumble tortilla chips on top of salad.
