Smart Ground® and Cheese Enchiladas

Ingredients:


1 package (12 oz) Lightlife® Smart Ground® Original, crumbled
cooking spray
1 can (15 oz) tomato sauce
1/2 cup water
1 Tbsp. ground ancho chile pepper
1/2 tsp. ground cumin
1/4 tsp. garlic powder
1 Tbsp. olive oil
1/2 cup chopped yellow onion
1 can (10 oz) diced tomatoes and green chilies, undrained
12 yellow corn tortillas (6-inch), warmed
1 1/2 cups shredded Mexican blend cheese, divided
sour cream (optional)

Preheat oven to 350°F. Spray 13x9-inch glass baking dish with cooking spray. Stir together tomato sauce, water, chili pepper, cumin and garlic powder in medium saucepan; bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes, stirring occasionally.

Meanwhile, heat oil in large skillet over medium-high heat. Add onion; cook 2 minutes or until tender, stirring occasionally. Add Smart Ground® and undrained tomatoes; cook 2 minutes more or until hot. Stir in 1/4 cup of sauce mixture.

Spread 1/3 cup of sauce mixture over bottom of baking dish. Top each tortilla with generous 1/4 cup of Smart Ground® mixture. Top each with 1 of tablespoon cheese. Roll up and place seam-side down in baking dish. Spoon remaining sauce mixture over top of enchiladas; sprinkle with remaining 3/4 cup of cheese.

Cover dish with aluminum foil; bake 20 minutes or until enchiladas are hot and cheese melts. Remove foil; bake 5 minutes more. Serve with sour cream, if desired.
