 | Thai Curry with Smart Strips® Chick'n and Vegetables

 Ingredients:
 
				  | 1 package (6 oz) Lightlife® Smart Strips® Chick'n |  | 1 can (14 oz) light coconut milk |  | 1/4 cup vegetable broth |  | 2-4 Tbsp.Thai green curry paste, to taste |  | 2 Tbsp. reduced-sodium soy sauce |  | 2 Tbsp. brown sugar |  | 1 package (10 oz) frozen stir-fry vegetables |  | 1/4 cup chopped Thai or Italian basil |  | 4 cups cooked jasmine rice | 
 In a saucepan, whisk together coconut milk, broth, curry paste, soy sauce and brown sugar. Bring to a boil over medium heat; reduce heat and simmer 15 minutes or until slightly thickened. Add vegetables and Smart Strips® Chick'n. Simmer 10 minutes or until Smart Strips® Chick'n and vegetables are heated through. Stir in basil. Serve over cooked jasmine rice.
