Quick Weeknight Paella

Ingredients:


1 package (6 oz) Lightlife® Smart Tenders® Savory Chick'n
2 cups water
1 package (8 oz) saffron rice
1 Tbsp. extra virgin olive oil
1 1/2 tsp. finely chopped garlic
3/4 tsp. paprika, medium heat
1 can (14.5 oz) diced tomatoes, drained well
1 jar (7.5 oz) marinated artichoke hearts, drained
8 ounces roasted red peppers, sliced
1 cup sugar snap peas, sliced lengthwise (about 3 ounces)
1/2 cup Chardonnay white wine
1/2 tsp. salt
1/4 tsp. freshly cracked pepper

In medium saucepan place 2 cups of water; bring to a boil over high heat. Add package of saffron rice, stirring while boiling for 1 minute. Reduce heat to medium low and cook covered 20-23 mins. Remove from heat; fluff with a fork. Set aside and keep warm.

In 10-inch nonstick skillet place olive oil. Add Smart Tenders® Savory Chick'n. Cook over medium heat until light brown (1-2 mins.). Turn over, continue cooking until browned (1-2 mins.). Remove from heat, cut into strips, keep warm.

In same skillet, over medium heat, add garlic and paprika. Stir for 30 seconds. Add remaining ingredients. Bring to a boil. Continue cooking, over medium heat, for 4-5 mins. (There will be some liquid in the skillet.)

On large serving platter, place rice, Smart Tenders® Savory Chick'n and tomato mixture. Stir gently to combine. Add shrimp if desired. Refrigerate leftovers.
