Lemon Caper Cutlets

2 servings (1 cutlet each)

Ingredients:


1 package (6 oz) Lightlife® Smart Cutlets® Original
1/2 cup vegetable broth
1/3 cup lemon juice
1 jar (2 oz) capers, drained
3/4 cup dry white wine (such as Pinot Blanc or Chardonnay)
3 Tbsp. finely chopped garlic
2 Tbsp. olive oil
3 Tbsp. all-purpose flour
1 egg, beaten
1/3 cup panko bread crumbs

Put broth, lemon juice, capers, wine and garlic in a medium sauté pan. Put over medium heat for 10-15 mins.

In the meantime, heat olive oil in second medium sauté pan over medium heat. Put a light coating of flour over each Smart Cutlet® Original cutlet (both sides), then dip both sides in a thin layer of egg and lastly coat with bread crumbs. When oil is hot, add cutlets. After 2 minutes flip them and cook other side for another 2 minutes (or until golden brown). When cutlets are ready, pour sauce over them and serve.
