 | Smart Ground® Shepherd's Pie

 Ingredients:
 
				  | 1 package (12 oz) Lightlife® Smart Ground® Original |  | 2 Tbsp. vegetable oil, divided |  | 3/4 cup diced carrots |  | 3/4 cup diced celery |  | 3/4 cup diced yellow onion |  | 2 cups quartered cremini mushrooms |  | 2 Tbsp. tomato paste |  | 2 Tbsp. reduced-sodium soy sauce |  | 1 Tbsp. all-purpose flour |  | 1 cup vegetable broth or water |  | 1 1/2 tsp. salt |  | 3/4 tsp. ground black pepper |  | 4 1/2 cups mashed potatoes (made from fresh potatoes or instant mashed potatoes) | 
 Preheat oven to 350°F. In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add carrots, celery and onion; cook about 5 minutes or until tender, stirring occasionally. Remove from skillet. In the same skillet, heat remaining 1 tablespoon of oil. Add mushrooms; cook about 5 minutes or until browned. Add vegetables and Smart Ground® Original to skillet; stir in tomato paste, soy sauce and flour. Add broth, salt and pepper; bring to a boil, reduce heat and simmer 1 minute. Spoon Smart Ground® mixture into 6 one-cup ramekins or ovenproof dishes. Spread mashed potatoes on top to cover completely. Bake about 30 minutes or until filling is bubbly and potatoes begin to brown.
