Warm Kale Salad with Wild Rice Tempeh and Smart Bacon®

Ingredients:


1 pkg (8 oz each) Lightlife® Organic Wild Rice Tempeh, cut into 1/4-inch cubes
1 pkg (5 oz each) Lightlife® Smart Bacon® Bacon Style Strips, roughly chopped
1 bunch fresh kale, roughly chopped
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon salt

Bring a large pot of water to the boil, add kale and boil for 30 seconds. Drain in colander. In a large skillet, heat oil over medium-high heat. Add tempeh and Smart Bacon®; cook, stirring frequently, for 5 minutes or until tempeh is light brown. Add kale, lemon juice and salt. Cook for 5 minutes, stirring frequently. Serve hot.
