Stuffed Cabbage Rolls

Ingredients:


1 package (14 oz) Lightlife® Gimme Lean® Beef
12 green cabbage leaves (large outer leaves)
2 Tbsp. canola oil
2 medium onions, finely chopped
2 cloves garlic, chopped
1 small green pepper, finely chopped
2 tsp. vegetarian Worcestershire sauce
1/2 tsp. salt
1/4 tsp. ground black pepper
2 cups cooked white rice
3 Tbsp. brown sugar
3 Tbsp. cider vinegar
1 can (15 oz) tomato sauce
4 Tbsp. water, divided

Cover cabbage leaves with boiling water. Cover and let stand until leaves are limp, about 10 minutes. Drain.

In a large skillet, heat oil on medium heat. Add garlic and onions; sauté for 2 minutes. Add green pepper; continue cooking until onions are translucent. Add entire package of Gimme Lean® Beef in small clumps to onion/pepper mixture. While browning, break up Gimme Lean® Beef into small, bite-sized pieces with spatula. Add Worcestershire sauce, salt and pepper; continue cooking over medium heat until browned. Add cooked rice.

Add brown sugar and vinegar to tomato sauce. Set aside 1/4 cup. Add remainder (large portion) of sauce to skillet; blend well.

Place about 1/3 cup Gimme Lean® Beef, filling at stem end of each cabbage leaf. Roll leaf around mixture, tucking in sides. Use toothpick if necessary to hold together. Place cabbage roll seam sides down in ungreased oblong baking dish (13x9x2 inches). Pour 2 tablespoons of water around rolls in pan to keep moist.

Combine reserved 1/4 cup of tomato sauce with 2 tablespoons of water and pour over stuffed cabbage rolls. Cover and cook in 350°F oven until heated through, 35-45 mins. Remove toothpicks before serving.
