 | Gimme Lean® Breakfast Casserole

 Ingredients:
 
				  | 1 package (14 oz) Lightlife® Gimme Lean® Sausage |  | cooking spray |  | 6 eggs, beaten |  | 1 1/2 cups reduced fat (2%) milk |  | 5 cups French bread cubes (3/4-inch cubes) |  | 3/4 cup shredded cheddar cheese, divided |  | 1/4 tsp. salt |  | 1/8 tsp. ground black pepper |  | 1 Tbsp. olive oil |  | 1 package (8 oz) sliced fresh button mushrooms |  | 1/2 cup chopped yellow onion | 
 Preheat oven to 375°F. Spray 8x8-inch glass baking dish with cooking spray; set aside. Combine eggs, milk, bread, 1/2 cup of cheese, salt and pepper in large bowl. Toss until bread is coated well; set aside. Heat oil in large skillet over medium-high heat. Add mushrooms and onion; cook 5 minutes or until mushrooms are tender, stirring occasionally. Meanwhile, cut Gimme Lean® into bite-sized pieces using serrated knife; add to skillet. Cook 3 minutes more or until Gimme Lean® has browned lightly. Remove from heat; cool slightly. Add Gimme Lean® mixture to bread mixture; stir to combine. Place mixture in baking dish; top with remaining 1/4 cup of cheese. Bake 40 minutes or until knife inserted in center comes out clean. Remove from oven; let stand 5 minutes.
